Banana bread has always been one of my favorite treats. But I often find they are unnecessarily filled with sugar! Bananas are sweet enough themselves, no need to add a cup of white sugar and three bananas to the mix. So for this recipe, not only did I nix the high sugar content of your standard banana bread, I made it grain-free and added some extra nuts to the mix for the ultimate banana nut bread! It was a delicious treat that would be perfect for a weekend breakfast or an afternoon with some hot tea.

Banana Nut bread
Makes 1 loaf
2 1/2 cups blanched almond flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
2 tsp cinnamon
1/2 cup bananas, mashed (about 1 small-medium banana)
1/4 cup raw honey, melted
1/4 cup coconut oil, melted (or butter)
3 eggs, beaten until frothy
1 tsp vanilla extract
1/2 cup chopped nuts- I use half walnuts/pecans
1. Preheat oven to 350 degrees. In a large bowl, whisk together almond flour, baking powder, baking soda, sea salt and all spices. Set aside.
2. In a second bowl, whisk together banana, honey, coconut oil, eggs and vanilla extract. Whisk wet ingredients into dry ingredients, mixing well. Stir in nuts.
3. Grease a metal loaf pan. Pour batter into pan and smooth top. Bake in preheated oven for 40-60 minutes or until a toothpick comes out clean. Let cool for at least 20 minutes in pan until turning and finishing cooling on a metal rack.
