Apple Pie Smoothie Recipe

I am definitely a pie girl. Hand me a slice of {gluten-free} chocolate cake and I’ll scarf it down, and like it- but tell me later there was apple pie instead? I’ll be heartbroken, let me tell you. I love my chocolate, but there’s nothing like an ooey-gooey piece of hot apple (or cherry, or peach, or strawberry) pie. I’ve even been known to eat a slice for breakfast the day after pie-filled holidays. And while I still haven’t challenged myself to make a homemade g-free apple pie, I did make this smoothie. It’s apple pie in a glass, and satisfies all of my pie-for-breakfast cravings.

I make this a cool smoothie, using raw apples but you could most definitely make this warmer by heating the apples up for a hot apple pie smoothie. The recipe serves two- enough to share with your hubby, for a snack later on in the day or breakfast the next morning. If it lasts that long.

Apple Pie Smoothie
Serves 2

3 medium local apples
¼ cup raw cashews
1 tbsp coconut oil
1 tbsp honey
1 tsp vanilla extract
½ tsp cinnamon
pinch nutmeg
pinch ginger
pinch cloves
1 cup nut milk or organic milk of choice
Ice, as needed
Optional: 2 packed cups spinach (will make smoothie green!)

1. Place all ingredients in high powered blender and blend until smooth. Add ice as necessary.

Make it a meal: Add 1 scoop of your favorite vanilla protein powder
