Cucumber Avocado Soup Recipe

I think we’ve established my love of soup here on the blog. It’s something I make frequently in the cooler weather, as it’s always warm and comforting, and there are SO many ways you can make soup! The different ingredients, bases, flavor combinations-possibilities are endless. Unfortunately, my love of soup doesn’t usually carry over to the warmer weather. I am much more keen to cooler dishes in the summer time, warm dishes make me overheat. I’m also not a huge fan of raw tomatoes, so gazpacho isn’t high on my list, either.

However, when I want something quick, easy and comforting, there is one soup I turn to in the summertime- that’s my Cool Cucumber Soup. It’s hardly even a recipe, it’s so incredibly simple. I just toss some cucumber, avocado, cilantro and water in a blender with some sea salt and spices, and blend ‘er up- dinner is served in five, literally.

But it’s just so good, I had to share it with you. Feel free to mix up the spices, I’m sure there are plenty of amazing combinations you could come up with, this is just the basic template I work off of. One of my favorites is to replace the cumin with curry powder and make it a curried cucumber soup!

Cool, Creamy Cucumber Avocado Soup

1 avocado, pitted
1 large english cucumber
small handful cilantro, more to top
1 1/2 tbsp lemon juice
1/3 cup water, more as needed
1 ice cube
1/4 tsp cumin
1/8 tsp garlic powder
pinch cayenne
1/4 tsp sea salt (more to taste)

1. Place all ingredients in blender and blend well. If blender gets too hot, add another ice cube to cool down soup. Taste for seasoning and adjust as necessary.

Serve chilled, with a sprinkle of fresh cilantro.
