Sugar Free Poppyseed Dressing

Lately at work Ive taken to grabbing a big green salad and topping it with some hard cooked eggs and a drizzle of whatever salad dressing we have in the fridge for a quick, digestion-friendly dinner. I recently fell in love with this poppyseed dressing we always seem to have on hand. Its vegan and gluten-free, however it is definitely not sugar-free.

By all other standards, the ingredients are quite natural for a bottled dressing: Canola Oil, Fresh Onion, Vinegars (White, Cider), Sugar, Water, Poppyseeds, Salt, Mustard Flour, Xanthan Gum. [source]

But I wanted to recreate this dressing at home without any canola oil, sugar or white vinegar was it possible?

Yes, yes and yes! My homemade version of this dressing was not only spot-on with the original, but I managed to create it without any of the above slightly sketchy additives. Ive been pouring it on everything, but my favorite is still spring greens and hard cooked eggs. Try it, it wont disappoint!

{Quick note: this recipe does contain raw onions, which can be a digestive irritant, so steer clear if onions bother you!}

Sugar-free Sweet Poppyseed dressing

1/2 cup grapeseed or other neutral oil
1/2 medium white onion, roughly chopped
2 tbsp apple cider vinegar
1/4 tsp stevia powder
1/4 tsp mustard powder
1 tbsp poppyseeds
sea salt, to taste

1. In a blender, blend all ingredients well. Add salt to taste, and more stevia if desired for a sweeter flavor.

Makes about 1 cup dressing
