Breakfast Pudding Recipe

I think we all know by now I have a thing for making dessert for breakfast. Its just such a lovely way to start the day, no? A big milkshake, chewy cookie or creamy pudding with a mug of herbal tea? Sounds good to me. This recipe started out as a simple chocolate milkshake green smoothie, and when I stuck my spatula in to test- it was PUDDING!

Now I could have made the choice to add more almond milk or water and turn it into a smoothie. But I really couldnt pass up the opportunity to eat a giant bowl of pudding for breakfast. So I scooped it in a bowl, topped it with a sprinkle of granola and ate it with a spoon- SIAB {smoothie-in-a-bowl} turns pudding. And oh, was it decadent. I loved it so much I made it again the next day. And again and, well, something else we all know by now- I get into food phases!

Not that its a bad thing, because this bad boy is choc full of healthiness. Just like a green smoothie, but a lot thicker and creamier. It plays on the concept of an avocado pudding, but with more nutrients to fuel your morning. Healthy fat, protein, fiber, greens, and a bunch of antioxidants to boot. The whole package, if you will.

Green Protein Breakfast Pudding
Serves 1

1/4 large avocado
1 medium/large banana, frozen
1 date, pitted
1 scoop protein powder of choice (I prefer vanilla Sun Warrior *see note below)
2 tbsp raw cacao
1-2 stalks celery, chopped
pinch sea salt
pinch cinnamon
large handful spinach
1/2-3/4 cup nut milk or water (or mix of both)

1. In a high speed blender, combine all ingredients except liquid. Starting with 1/2 cup, add milk/water until desired consistency is reached!

And voila! Pudding for breakfast that wont leave you fearing a blood sugar crash.
