Ingredients

4 cups old fashioned oats (I like Bob’s Red Mill Organic Oats)
1 cup Maple Syrup
1 cup Olive Oil
1/3 cup chopped almonds
1/3 cup chopped walnuts
1/3 cup chopper pecans
1/4 cup pepitas
1/2 teaspoon cardamom
1 teaspoon vanilla
1/2 teaspoon seasalt or kosher salt
1/4 cup crystalized ginger
1/4 cup dried apricots

Instructions

Mix all ingredients well using a wooden spoon, except ginger and dried fruit.
Distribute evenly in a thin layer on a baking sheet.
Bake at 200 degrees for 20 minutes and lightly stir a few times to avoid sticking.
Then remove from oven, and mix in dried fruit and ginger.
Let cool, then place in sealed jar for fresh keeping.

Notes

Granola will keep for 3 weeks or so.
